Fluffy Cassava Flour Pancakes {4 Ingredients!}

After many years of trial and error, I finally bring to you a gluten free pancake recipe that is the FLUFFY of your dreams! This is it. This is the one. This is the one that makes your mouth and jaw tingle upon contact with your tongue. This is that weightless, fluffy cloud-like pancake. The secret is...WHIPPING THE EGG WHITE(S) SEPARATELY and folding them in at the end. Of course, you need a good quality flour too. I'm head over heels for Otto's Cassava Flour - it actually mimics the fine and silky powdery-ness of white all-purpose flour more than anything I've tried, and it's actually healthy. Plus, picky eaters won't even know it's gluten free (ha-ha!).

Because I typically make recipes like pancakes and waffles for one serving, this recipe serves one. I also typically eye my ingredients and weigh them by gram on a food scale. So that's what the recipe below offers. As I experiment a bit more with increasing the serving size and getting measurements that are easier to follow for those without a food scale, I will come back to modify for that. Otherwise, feel free to comment with questions on substitutions. And let me know if you whip these up! I wish my weekday mornings weren't so chaotic, so I could have these more often - I think my days would be so much better because of it!

RECIPE: 4-Ingredient Fluffy Cassava Flour Pancakes {Healthy, Gluten-Free, Paleo, Dairy Free and Sugar Free (optional) }

  • 1 egg, separated
  • 100 ml. kefir (or buttermilk, or non-dairy kefir sub)
  • 1 Tb oil, avocado oil or coconut oil (you can also use melted butter or ghee)
  • about 30 grams (1/4 cup) Otto's Cassava Flour
  • 1/4 teaspoon each of: baking powder, baking soda, salt, vanilla
  • Optional: sugar, honey, chocolate chips, etc.

Directions

  • Beat the egg yolk, kefir, and oil/butter (melted), and vanilla.
  • In separate bowl, mix all dry ingredients (flour, powders, salt). Add the dry to above wet ingredients. Set aside.
  • Whip the egg white separately until firm peaks form. Fold gently into batter.
  • Sizzle on a buttered skillet and get wild with toppings - maple, honey, nut butters.
